Festive cooking: Chicken cordon bleu croissant wreath

As usual this year also flew by so fast. A brand new nephew (who i will meet in a weeks time), a good couple of breaks for Chaiparty, an interesting business preposition, a new house and a pretty decent year if you ask me. Really thankful for all that has been bestowed upon us this year.

Christmas is going to be at home in India with family this year and I'm thoroughly looking forward to it. Baking is on in full swing, to gift to neighbours and friends and this lil number right here was served at a pre Christmas party at mine a few weeks back. Christmas is the time for a table stunner of a dish and i think this Chicken Cordon Bleu croissant wreath will definitely give the guests something to talk about.

I was lucky enough to attend a session with Maille at their flagship store in Piccadilly circus and got to taste some of their amazing flavoured mustard and must say I'm hooked on to them. It goes into my pasta's, bakes and with meat and I've also got the husband (a not so big mustard fan) hooked. I have also bought a few favourites like the mustard with carrot, with truffle and the one with garlic as gifts for family back home. They make lovely Christmas gifts, especially for those inclined to cooking.

A while back Maille sent me a gift hamper with their most popular products-  Dijon Originale, Honey Dijon and Wholegrain mustard and I've been thoroughly putting them to good use. They also sent me 2 recipes to use for the festive season, but i just couldn't resist making the cordon bleu wreath where mustard as a product would be put to its full use. Not to worry, I am definitely going to try the zesty carrot cake sometime soon and blog it too. I mean a cake that uses mustard, that should be pretty interesting I'm sure.

The Dijon Originale and Wholegrain have been used in this recipe, and its such a great addition. They bring forth the mustard presence, but not in an overpowering, annoying sort of way and you still get the other flavours coming through. The honey Dijon has been making its way through to many salads and its perhaps my most favourite of the three. So darn tasty, i can actually eat it on its own :)

I dont think i'd get to update the blog till i get back from India, so here's wishing everyone a very Merry Christmas.

Serves- 3 to 4 as part of a main meal

For the filling
Boneless, skinless chicken thighs- 450 gms
Salt - to season
Pepper- to season
Garlic powder- 1/2 tsp

Maille Original Dijon mustard- 1 tbsp
Mayonnaise- 2 tbsp
Ham slices- 4 to 5, cut in cubes

1 Jus Rol Bake-it-Fresh Croissant can
Parmesan or Swiss cheese- 1/2 cup, grated
Milk- 2 tbsp (for glaze)

For the mustard cream sauce

Butter- 1 tbsp
Plain flour- 1 tbsp
Milk- 1 cup
Maille Multigrain mustard- 2 tbsp
Thyme- a sprig
Parmesan cheese- 2 to 3 tbsp*
Salt- to taste
Pepper- to taste

Cut the chicken thighs into small bite size pieces and cook in a saucepan with salt, pepper, garlic powered and a dash of water.
Cook till done and keep aside till slightly cool.
(You can also cook chicken on the bone, and if doing so, shred it into small pieces once cooked and cooled)
Once cool, stir in the Dijon mustard, mayo and ham slices.

Preheat oven to 180C and line a large baking tray with baking paper.
Pop open the croissant can and lay out the croissants like a star, overlapping each other and as symmetric as possible. Make sure there aren't any gaps between the croissants.
Place the filling all around the ring and top with cheese.
Fold the croissants over and tuck under the wreath if possible or else, trim a bit and pinch the edge you fold over.
Give the wreath a milk wash and chuck into the oven for about 20 minutes.

While the wreath is baking, get on with the sauce.
Melt butter in a saucepan on medium heat, and add the flour. Cook for about 2 minutes.
Add half the milk and whisk with the flour to form a smooth paste.
Pour in the remaining milk, the multigrain mustard, thyme, salt and pepper and  stir continuously until thickened.

Once the croissant wreath is out of the oven, cool on a cooling rack for a couple of minutes after which pour the mustard cream sauce over generously, slice and serve.

Notes: You can do a veg version of this with beans, carrot, corn or even add spinach or kale to the chicken and do a non cordon bleu version.
I have also tried the same with puff pastry, and its equally delicious, but its a pain to get it as a wreath.
The filling can be made a day ahead
I used cheddar cheese as i was out of parmesan

Festive recipes from Neil Rankin

I'm definitely not new to mulled wine and cider, but mulled beer is something I've not really come across. I guess its for people like me that Neil Rankin has partnered with AB InBev to create 2 perfect winter warmers using beer- Mulled Thai Spiced Lager and Mulled Ale. He has picked some of the nation's favourite beers and turned them into mulled drinks using ingredients that are easily available at home, but brings together different flavours altogether.

I was a bit doubtful after reading the ingredients in his mulled Thai spiced lager. Coriander stalks and mint leaves with beer?? Wasn't too sure how it would taste, but it wasn't that bad. Of course if you are not a fan of lemon grass, then this drink is a not for you. Also, the spice does really kick in once warmed, so be sure to not go overboard with it. Get both his recipes here.

I guess by now everyone knows that rapeseed oil is one of the most healthiest oils to use with a near perfect balance of essential fatty acids, omega 3, 6 and 9. I do cook a bit with rapeseed oil and in the new year i shall try and do a lot more baking and Indian food prep using rapeseed oil.

I'm a sucker for anything infused, be it alcohol or oil or cakes or whatever it is. A couple of weeks back i attended a small Christmas do hosted by Lactofree at the really charming Bake-a-Boo tea shop in Hampstead. Done up in pretty pastels and laces and flowers, it was almost like walking into an Alice in Wonderland enchanted tea party. Amidst chit chatting with fellow bloggers, we got to enjoy some incredible treats using products from the Lactofree range. From smoothies to sandwiches, to turkey meat balls to pita Christmas trees to scones to mince pie cupcakes to Irish cream and truffles, we were stuffed to the gills, and had to sadly leave behind a gorgeous looking trifle. I have to also mention the impressive collection tea's this lovely lil place had. I tried the strawberry and kiwi and kept stealing sips from the almond tea (this was like having marzipan) and rose tea my blogger friend Suchi had ordered.

I put my Lactofree cheddar to good use the very next day in a posh version of the mac & cheese and then some in a chilli cheese toast. The Almond milk (very impressed with the semi-skimmed version) is currently being enjoyed in different versions of winter warmers, precisely hot chocolate. Below is my favourite version using my favourite dark cocoa, honey, a generous pinch of cinnamon and the secret, a good sprinkling of fleur-de-sel right at the very end before pouring it into your mug. I am loving the addition of salt and Ive ended up adding it in all my hot chocolate versions. Really! try it!

Schwartz
I'm a big fan of the Schwartz products. In preparation for winter and the holidays, Schwartz has introduced 2 new products to their vast range- Mulled Cider and Mulled Wine spice sachets. For lazy bums like me who love mulled drinks but cant be bothered to put together the spices and make them, this comes as a saving grace. They come in sachets and are pretty easy to use- much similar to tea bags.

Chia Bia

Not one for healthy eating, but I was given the task of taking the Chia Bia challenge and see how it does good to your system, and so i decided to give it a go. I admit, it was a bit of a struggle to get the ball rolling when trying to use an ingredient that you have no idea about. Chia seeds are high in fibre, protein, calcium, omega 3 and so on; and with Chia Bia, you only need 2 tablespoons a day to get you feeling tip top.

I used them in a lemon drizzle cake and proudly took it to work the next day much to the disappointment of my health conscious boss who as it turned out was a big fan of chia seeds. She told me that baking it or cooking it kind of defeats the whole purpose of using a super food like this and insisted i try it out in salads, smoothies and drinks.

I took the chia berry mixes- cranberry and blueberry to her place soon after and i tasted one of the most amazing smoothies there. I honestly had no idea kale could taste so nice in a drink. She made a green smoothie with broccoli, apples, oranges, kale, banana and some chia cranberry and also sprinkled some whole chia seeds on top for good measure and promised me it would taste good. Of course, nothing green could ever taste good was my reply but i had to change that soon after my first sip. It was delicious. Ever since, ive been motivated to try vegetable smoothies at home and have quite succeeded in making a few using Chia Bia. I still have plans to try it out in a cookie or a snack bar, but i think for now I'm thoroughly enjoying them in my smoothies. You can seriously consider these smoothies as a detox option after all that binge eating and drinking during the holidays.

DIY home made gifts for Christmas

A bunch of us here have a tradition of making home made gifts for Christmas. Just for the fun factor, we all slog it out for weeks and come up with DIY gifts that for me are much more personal than buying something from the stores. Last year i gifted everyone this home made lemon extract and sweet and salty crunchie bars. This year, I thought I'd go completely off food and do something different. Needless to say, hours were spent on pinterest, Etsy and the like for some motivation and finally i decided on doing vintage home made candles.

I have been obsessed with candles for the longest time. There used to a time back in India when i had candles strewn all over my apartment but when there was a power cut I wouldn't let Ro light even one of those (because they were really too pretty to waste at a power cut). It was a joke my husband loved telling everyone. Grown out of all that, now i use scented candles more to smoothen the cooking smell and such.

I had chanced upon candles in vintage tea cups long back and since i had trawled Ebay for English tea cups for our chaiparty (more on this later), i knew what my options were. So making a decision to gift those came easily. Now, of course i couldn't gift just a candle, so again pinteresting started and i decided to gift a sa pack for my friends this year. the pack would have the scented vintage tea cup candle and an assortment of scented fizzy bath bombs, for that relaxed night in.

They were both really really easy to put together and I was rather proud of how organized I was this time, ordering everything online and finishing it all off way ahead of time. The cost is also very minimal because you are putting these together yourself, and for me it was the creative part of it that was most fun.

My lovely friends gifted me so cool stuff as well. Vineetha made delicious rocky roads and presented them in a beautiful vintage tin, Gayathri went all out and made a hamper with Christmas classics like mulling syrup, stollen, panettone, salted caramel and garam masala sea salt and Suchi did a spa pack with personalised body scrub and lip balm, full on with our name tags and such. Not to mention, her packaging was spot on. I love this tradition of ours and am so glad I have a small group of friends who share the same interests. We exchanged these gifts over a lovely brunch in Covent Garden followed by some shopping.

Scented candles in vintage tea cups (makes 4)

Vintage tea cups with saucers- 4 (i bid on them on Ebay. These are Royal Albert English Rose tea cups)
Candle wicks- 4, waxed and preferably with sustainers
Wooden skewers- 8, to hold the wicks in place
Heat proof bowl- 1
Saucepan
Cup with spout (if its heat proof then use that for the wax as well, in which case the cup is not required)

Eco friendly soy wax- 500 gms
Wax dye- 2 gms (I used baby pink. For a darker shade add more)
Fragrance oil- 1 tsp, or according to preference (I used one called Woodland Rose)

Before getting on with the process make sure you have set up the containers with wicks etc.
I first tried to keep the wicks in place with a clothes peg balanced on the rim, but when i poured in the wax, with the slightest movement they changed position.
So I placed two skewers on either side of the wick to keep it in place (as in picture).
(small sticker dots to stick the wick came with the kit but the moment the hot wax hit it, it just melted and came off. i have no clue what the purpose of this thing was)
PicMonkey j Once the mis en place is intact, heat enough water in a saucepan to come about half way up and bring to a simmer.
Place the wax in the heat proof bowl (cut them up into smaller pieces if they are in a block, to allow easy and even melting) along with the wax dye and let it slowly melt.
Use a long wooden skewer to stir in between if needed.
Once the wax has completely melted, take it off bain marie and keep aside to cool a bit.
Pour in the fragrance oil at this point, stir with the skewer and slowly pour into the cups till about 3/4th full.
If the wicks have moved a bit, don't worry, just readjust. The wax is not going to set immediately.
Also, rinse out your utensils quickly.
Don't move the candles until its completely set. If there is a bit of sinking in the centre, just warm some more wax and fill it up.
Light the candles only after 24hrs.

Scented fizzy bath bombs (makes 12- adapted from here)

Measuring cup
Mixing spoon
Mould- I used my muffin tin

Baking soda- 1 cup
Corn flour- 3/4th cup
Epsom salt- 1/4 cup
Citric acid- 1/2 cup
Food colour - 3 different colours (I used baby blue, kiwi green and pink)
Fragrance oils- 3 different ones (blue- winter spice, Green- Christmas pine, Pink- Woodland rose)
Water- as needed

Mix together the baking soda, corn flour, Epsom salt and citric acid in a bowl.
Divide it among 3 bowls, around 3/4th cup in each bowl.
Add the colours and fragrance oil into each and starting with one, sprinkle water into the mix bit by bit and mix with a spoon or with your hands if that's more convenient.
Watch it fizz, but make sure you only sprinkle water and not pour water into it or else you'd have a lot of cleaning up to do.
Add enough water to get the mix together. Take a fist full of the mix and press hard and if they hold the shape then you are good to go. If now, add some more water and get the desired consistency.
Pack the mix tightly into the muffin pan and keep aside for about 24 hrs before you turn it over and tap the bath bombs out of the tin.
Store them in air tight containers till ready to use of pack them immediately if gifting.

To use, fill a bath with water and thrown the bomb into it. Watch it fizz, change the colour of the water, enjoy the aroma and have a relaxing bath.
The baking soda and citric acid makes it fizz and the addition of Epsom salt acts as a muscle relaxant

Home made lemon extract (DIY edible Christmas gift)

Every year I have major plans of making edible gifts for my friends. Last year I started off with good intentions; to make a hamper of sorts with all cool edible gifts... because you know food blogger and all, people would be more happy to receive things to eat than onesies form Primark. Since sending edible gifts by post to parents in India was not an option, I thought of making a recipe calendar for them with my "gorgeous photographs (self-proclaimed of course)" and recipes. I harassed Ro so much about the calendar - software to use, how to get dimensions right, where to get it printed etc etc- that he finally lost it and asked me to just do my own shit.

And that's exactly what i did... wasted A LOT!!!! of time with the damn calendar. The thing is, I have this image of how it should be in my head and I have to get it that way no matter what. The fact that I was challenged with high end photo editing software meant I had to use Picasa and PicMonkey to take care of my needs, and unfortunately my needs exceeded the basic help these options left me with. So by the time I got to month March it was around 30th of December. No way was I going to finish the remaining 9 plus the main cover in less than a month. So there, that conveniently ended my calendar plan.

You might wonder if I at least completed my edible hamper idea.. nope that also didn't happen in spite of pinning tonnes of packaging and labelling ideas and looking forward to making them. It actually made me wonder if I was more interested in packing and labelling things, than making the edible gifts. The only thing I finally did was send these cupcakes to my neighbour..yes in that red plate itself. Shame on me, I know!!

This year, I started early, in spite of a crazy work schedule. These home made lemon extracts are proof that I actually have edible gifts to send out to friends. The old me would have waited till 24th December to infuse, but no, I'm 17 days early and patting my back for being proactive. They will be one of the gifts my lucky friends receive. My non alcoholic friends will of course get some edible goodies which i'll try and blog before Christmas, but no promises.

First on the list will be the Christmas themed cookies I'll be making with the new OXO Good Grips Cookie Press. This fabulous gadget not only lets you whip out cookies of same size, but you also have the option of selecting from 12 different shapes with snowflake, wreath and tree definitely going into my Christmas gift box. The daisy, buttercup and sunflower are a personal favourite so I'm going to include that too for good measure. The stainless steel blades are dishwasher safe and can be easily stored in the box that comes with the gadget. The cookie press will be available in Lakeland from January 2014 and if you want to make loads of cookies at one go then this is the gadget to have.

Lemon extract basic recipe adapted from here (makes 3, 236ml bottles)
Vodka- 3 cups (any quality is fine)
Lemons- 5 to 6 (make sure they are organic, unwaxed lemons)
Glass bottles with lid- 23 to 250 ml

Sterilise the bottles by washing them in warm soapy water and then leaving to dry completely.
Wash the lemons and wipe them dry.
Peel the lemons with a zester, making sure none of the white pith comes along with the zest.
Carefully add the zest into the bottles. I added around 2 lemons per bottle for a strong flavour. 
Pour in 1 cup of vodka per bottle. If you use a measuring jug with a beak, it would be much easier, or a funnel.
Seal with a lid and store in a cool dark place.
Gently shake it everyday, for about 1 week or so, or alternate days at least.
When ready to use, either strain the fruit and use or simple keep using the extract as and when required with the peel still in the bottle.
Dress the bottle and its a perfect Christmas gift.

Notes: I bought my bottles online at a very reasonable price
I chucked a slit birds eye chilli into one bottle
My next set of 3 will be orange extract. Use one large orange for each bottle and follow the procedure mentioned above.
You can actually go crazy with infusing vodka- vanilla, rosemary and lime, raspberry, blackberry, mango, peppercorns- are on my to do list. If you do want to give it a shot, just eye ball the measurements based on how strong you'd like them to be and use accordingly.
Add the extract to bakes, cakes and custards or add some simple syrup and use in a cocktail.
