Swede and carrot thoran (stir fried with coconut)

I had never cooked or eaten swede, till today that is. And I'm pretty sure it will be the last in a preparation like this. I am yet to try out the swede mash, which I hear is pretty decent, but it will have to wait.

As I had mentioned in my previous post about piling things in my cart, this pack of swede and carrot diced and ready to cook, was also part of that.
I followed the recipe for a basic thoran (South Indian preparation with coconut) replacing asparagus with the swede and carrot (approx. 250 gms each), chopped into cubes.
You can have it with roti or as a side to rice and dal.

Thoran is always a healthy option for veggies especially the new ones, I have personally not used this vegetable but would love to if I get hold of it.

You are making me want to step out of my culinary box! This dish looks amazing, and it is something I'm largely unfamiliar with. Your photographs are just stunning, though. I'm drooling! Thank you for sharing, dear. I hope you have a beautiful Sunday!

It looks good, swede can be hard work to chop up so those diced bags are easier to prepare. I think it's best in big chunks in a lamb casserole and yes the mash is nice too - maybe mixed with potato since it can be a bit watery on it's own.
